Corn Chowder
  1. Cook bacon in a Dutch oven until crispy. Remove and reserve.

  2. In the bacon fat, cook onion and celery until soft. Add garlic, thyme, potatoes, salt, pepper, and flour. Stir and cook 1–2 minutes.

  3. Add chicken broth and simmer 15–20 minutes, until potatoes are tender.

  4. Add frozen corn and simmer 5 minutes.

  5. Blend about 2 cups of soup, return to pot, and stir in cream/milk.

  6. Add bacon and serve.
