Add the veggies to a lined baking tray, season with a drizzle of oil, garlic granules, salt and pepper. Oven @ 180*C for 12 - 15 mins.
Boil pasta as per packet.
Blend together dressing ingredients.
Once veg is cooked, add to cooked pasta, pour on dressing, add protein of choice and spinach, toss well and enjoy.
