Scallion Oil Noodles, Shanghai-style (葱油拌面)
  1. Make the scallion oil, strain, and reserve the crispy fried onions.

  2. Add the scallions and onions to the oil, and up the heat to medium high. Once bubbles begin to form, lower the heat to medium low. Fry until the onions become crispy and golden brown, about 7-12 minutes.

  3. Steam the shrimp for ten minutes, reserving the steaming liquid.

  4. Mince and fry the shrimp. Finely mince the now steamed shrimp and fry at medium-low for about two minutes.

  5. Boil the noodles in heavily salted water until they float, then add a cup of cool water to the pot. Once it returns to a heavy simmer/light boil, strain the noodles.

  6. Make your sauce by combining the shrimp steaming liquid, light soy sauce, dark soy sauce, and sugar in a pot. Bring it up to a boil.

  7. Assemble the dish by mixing everything together or layering it. Drizzle scallion oil over everything and garnish with crispy fried onions and fresh scallions.
