Lemon-herb Roasted Chicken Thighs
  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix together olive oil, lemon zest, lemon juice, chopped herbs, minced garlic, salt, and pepper.

  3. Place the chicken thighs on a baking sheet and rub the lemon-herb mixture over each piece.

  4. Roast in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165°F (74°C).
