In a bowl, mix together olive oil, lemon zest, lemon juice, chopped herbs, minced garlic, salt, and pepper.
Place the chicken thighs on a baking sheet and rub the lemon-herb mixture over each piece.
Roast in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165°F (74°C).
Allow the chicken to rest for a few minutes before serving. Serve with a side of roasted potatoes or your favorite veggies.
