Preheat the Oven:
Preheat your oven to 400°F (205°C).
Prepare the Puff Pastry:
Roll out the puff pastry slightly, keeping it mostly in a square shape. Place the puff pastry on a cast iron skillet or a parchment-lined baking sheet (if you plan to transfer it to a serving dish later).
Prep the Brie:
Place the wheel of brie in the center of the puff pastry. Using a butter knife, poke small holes halfway into the brie all over the top. This allows the fig jam to seep into the cheese.
Add the Fig Jam:
Spread the fig jam evenly over the top of the brie. In a small bowl, beat the egg with a splash of water to make an egg wash. Brush the inner edges of the puff pastry with the egg wash.
Wrap the Brie in Puff Pastry:
Fold the puff pastry up around the brie, gently sealing the edges and leaving some of the fig jam exposed. Press the seams to ensure the pastry is sealed.
Bake the Brie:
Brush the top and outside of the puff pastry with the egg wash. Bake for about 25 minutes, or until the puff pastry is golden brown.
Garnish and Serve:
Once baked, top the puff pastry-wrapped brie with sliced figs, chopped pistachios, and a drizzle of honey. Sprinkle chopped rosemary or thyme on top, and garnish with sprigs of fresh herbs. Serve warm with crackers, sliced baguette, or apple slices.
