Gingerbread Loaf
  1. Preheat oven to 350 F and line a loaf pan with parchment paper.

  2. In a large bowl whisk flour, baking soda, baking powder, cinnamon, ginger, cloves, and salt together.

  3. In a medium sized bowl whisk molasses, milk, eggs, butter, brown sugar, and vanilla extract together.

  4. Add the wet ingredients to the dry. Using a rubber spatula mix together just until combined. Do not over mix, once the flour streaks are gone stop mixing.

  5. Add the batter to the loaf pan and spread evenly. Sprinkle with coarse sugar.

  6. Bake for 50-55 minutes or until a toothpick inserted into the centre comes out clean.

  7. Let loaf cool to room temperature before slicing.
