Cook pasta according to package directions until al dente.
While pasta is cooking, dice V Bacon and cook in a cast iron pan over medium-high heat until crispy.
Add diced onion to the pan with the bacon and cook until translucent.
Add minced garlic and cook for another minute until fragrant.
Drain pasta and transfer to a large bowl.
Add the cooked bacon and onion mixture to the pasta.
Add frozen peas, chopped kalamata olives, and capers to the bowl.
Add chopped parsley.
Add vegan mayonnaise or yogurt.
Add a drizzle of olive oil.
Season with salt and black pepper to taste.
Stir all ingredients together until well combined.
Serve hot or cold.
