Cream 590g sugar with 2 sticks softened butter until light in color & fluffy
Add 6 eggs one at a time, followed by 1tbsp of vanilla bean paste & 260g of roasted sweet potato
Then add 75g vegetable oil & 185g sour cream
Lastly add the dry ingredients: 375g flour, 1tsp baking powder, ½ tsp baking soda, Cinnamon, Nutmeg, 2 pinches of salt. Sift together then add to the batter, I start in the mixer and mix the rest by hand
Bake at 350° for around an hour. Test with tooth pick for moist crumbs.
Mine bake for about 1hr 15 mins, but baking them with steam increasing my baking time.
