Marinate the Tofu Topping: Grate tofu, toss in garam masala and turmeric, drizzle with oil, and set aside to soak in the flavours.
Prep the Veg: Finely chop onion, garlic, ginger, and coriander stems.
Cook the Dal Base: Sauté onion, garlic, and ginger, then add spices and tomato puree. Stir in silken tofu, water, and cream, and simmer until thickened.
Bake the Tofu: Spread the marinated tofu on a baking tray, bake until golden and crispy.
Serve: Stir lime juice into the dal, then top with crispy tofu, a drizzle of cream, fresh coriander, red chilli, and serve with naan.
