Heat oil in a skillet on medium-high heat. Pat dry steak strips and season with cumin, salt, pepper. Add beef to brown for a few minutes.
Add onion and garlic. Stir and saute, until softened. Add aji amarillo paste, soy sauce, and vinegar. Mix well. Add tomatoes and cook for another 2-3 minutes. Sprinkle in cilantro.
Serve with fries and rice.
