Korean Soybean Paste Stew (doenjang Jjigae)
  1. Add 2 cups of broth to a pot and boil.

  2. Once boiling, add 1.5 heaping tablespoons of fermented soybean paste.

  3. Add 0.5 tablespoons of gochujang.

  4. Add in your chopped veggies (onions, squash, spinach) and tofu.

  5. Boil for ~4 minutes or until veggies are soft.

  6. Add enoki mushrooms on top and boil with the lid on for 1 more minute.

  7. Serve with a bowl of rice and your favorite side dishes, and enjoy!
