Prepare tzatziki sauce by mixing 75g Greek yoghurt, 5g minced garlic, dill, salt, freshly grated cucumber, and a squeeze of lemon juice
Make garlic flatbread by combining 60g self raising flour and 75g Greek yoghurt, adding parsley flakes if desired, and kneading until consistent
Lightly flour your surface and roll out the flatbread dough
Cook the flatbread on a pan or griddle until golden
Assemble the gyro by placing cooked chicken on the flatbread
Add sliced tomato, red onion, and fresh parsley as toppings
Drizzle with tzatziki sauce and serve
