Velveeta Fudge
  1. Prepare a 9-inch square baking pan by lining it with lightly greased parchment paper or non-stick aluminum foil.

  2. Whisk together the confectioner's sugar and cocoa powder in a large bowl. Set aside.

  3. Heat the butter and cheese in a saucepan over medium heat until melted, stirring constantly. Use a whisk to keep it from separating.

  4. Stir in the vanilla extract.

  5. Pour the cheese/butter mixture into the bowl with the sugar and cocoa. Gently stir and fold together until there are no visible streaks of powdered sugar.

  6. Add nuts if desired.

  7. Pour into the prepared pan. Chill until set; it can take several hours to firm. Cut into one-inch squares.
