Combine chicken feet, quartered onions, carrots, celery, smashed garlic, and ginger in a large pot
Add bay leaves, peppercorns, thyme, oregano, and coriander seeds
Pour in 4 quarts of water
Add 3 tablespoons of salt and optional cayenne
Bring to a boil, then simmer for 8 hours to extract nutrients and flavor
Strain and store
