Strawberry Rhubarb compote
  1. In a large pot, melt the butter and add the sliced rhubarb. Saute until softened, about 5 minutes. Add the brown sugar, vanilla, and orange zest and stir until the sugar melts completely and the mixture is bubbly.

  2. Remove from the heat and add the strawberries. Let cool completely.
