Passion Fruit Or Lemon Curd
  1. Place all ingredients into a saucepan on low heat and stir with a metal spoon continuously for 10-15 minutes until thickened

  2. The curd should coat the back of a spoon in a thin layer when it's ready. Don't worry if it's thin, it'll thicken as it cools

  3. Store in an airtight jar in the fridge for 2-3 days or freeze into portions for future use
