Wash potatoes under cool running water using a veggie brush if needed.
Peel off the potato skin if desired.
Slice large potatoes in half to make them easier to handle.
Cut potatoes into the desired thickness and length using a paring knife or french fry cutter.
Fill a bowl with cold water and place fries into the bowl as you continue cutting.
Let fries sit in the water for 10-15 minutes to remove starch.
Drain fries in a colander.
Bring a large pot of water to a rolling boil and boil fries for 3 minutes (4-5 minutes for thick-cut).
Cool fries quickly in a bowl of cold water with ice cubes.
Drain and blot excess water with paper towels.
Place fries on a non-stick baking sheet in a single layer and freeze for 60-90 minutes.
Remove fries from the baking sheet and place in freezer storage bags, purging out the air and labeling them.
To make fries, preheat oven to 375 degrees F.
Coat fries with oil and sprinkle with salt and black pepper.
Bake in a preheated oven for approximately 10-12 minutes.
