Peanut Lime Chicken With Cucumber Pineapple Salsa
  1. Marinate chicken for at least 15 minutes or overnight for best results

  2. Air fry at 210°C for 15–17 minutes, turning halfway — spoon over remaining marinade in the final few minutes to caramelise

  3. Alternatively grill under high heat for a similar time, turning halfway and brushing with extra marinade

  4. Meanwhile combine cucumber, pineapple, avocado, spring onions, lime juice and zest, honey, mint, and chilli flakes — toss well and season to taste

  5. Serve chicken over rice with salsa on the side
