Cut onions, garlic, mushrooms and bell peppers. The bell peppers in thin slices.
Fry the vegetables and in a different pan fry the chicken. You can add spices now to the vegetables if you want.
Once the vegetables have color add red wine and crushed tomatos, bay leaf and chicken broth. Let it boil on high heat.
Once a lot of the liquid has evaporated you can add the chicken and mushrooms. You can fry the mushrooms first but it is not necessary. You may need to add some water again. Make sure to lower the heat.
Add pesto and let it simmer on low-medium heat for at least an hour. You can put a lid on if you leave it on low heat.
Taste and add spices as needed. When you only intend to leave it for 5 more minutes add cooking cream. Don’t add too much.
