Heat the olive oil in a large pan over medium heat. Add the onion and garlic, and sauté until fragrant.
Stir in the broccoli, orzo, and chicken broth. Bring to a boil, then reduce the heat to low, cover, and let simmer for 10 minutes.
Stir in the cheddar cheese until melted and creamy. Season with salt and pepper to taste.
Optional: Sprinkle extra cheese on top and broil for a minute or two for a golden, bubbly finish.
