Fermented Homemade Mayonnaise
  1. Start by cracking the very fresh room temperature egg into a mixing container.

  2. Next, add about a teaspoon of good quality prepared mustard.

  3. Then, incorporate half a teaspoon of salt and two teaspoons of lemon juice.

  4. If you like, you can also add finely chopped fresh herbs or garlic for extra flavor.

  5. Pour in two tablespoons of probiotic brine from yogurt or another ferment.

  6. Now, add one and a quarter cups of good quality oil to the mixture.

  7. Blend everything together until the mixture is thick and well combined.

  8. Cover the mayonnaise and let it sit on the counter for six to ten hours to allow it to ferment.

  9. Once fermentation is complete, store the mayonnaise in the refrigerator.
