Honey Chipotle Chicken Quesadillas
  1. Season 40oz chicken breast with 1 Tbsp garlic salt and 1 Tbsp black pepper

  2. Cook the seasoned chicken breast until fully cooked

  3. Shred the cooked chicken

  4. Mix 7oz canned chipotle peppers, juice of 1 lime, and 2 Tbsps honey with the shredded chicken

  5. Prepare chipotle sauce by combining 2 cups cottage cheese, 3 Tbsps light mayo, 3 Tbsps minced chipotle peppers, juice of 1 lime, 0.5 Tbsps garlic salt, 0.5 Tbsp black pepper, 2 Tbsps honey, and 0.5 cup fat free milk

  6. Spread chipotle sauce on each low calorie tortilla

  7. Add chicken mixture and 6 cups fat free mozzarella to each tortilla

  8. Fold tortillas in half to form quesadillas

  9. Wrap quesadillas in aluminum foil or place in airtight freezer bags

  10. Freeze for up to 3 months

  11. To reheat, wrap frozen quesadilla in wet paper towel and microwave for 3-4 minutes

  12. Optional: toast in pan or air fry for a few minutes for crispiness

  13. Garnish with fresh chives
