Chicken and Lemon Meatballs
  1. Using your hands, mix together the chicken mince, garlic, breadcrumbs, lemon rind, thyme, egg and some salt and black pepper. Wet your hands and form tablespoons of the mixture into balls and place on a lined tray. Refrigerate for 30 minutes.

  2. To make yoghurt mint sauce: mix together all the ingredients.

  3. Heat the oil in a non-stick frying pan and cook the meatballs in 2 batches, until golden on all sides and cooked through. Sprinkle with lemon juice, transfer to a serving dish and sprinkle with more salt. Serve with yoghurt mint sauce.
