Slow roast 4 medium sweet potatoes on a wire rack at 350°F for 75 mins.
Cook 1 lb lean ground beef (93/7) in ½ tbsp olive or avocado oil. Season with salt, pepper, and 1 packet of taco seasoning or 1 tbsp garlic powder, 1 tbsp oregano, 1 tbsp sweet paprika, and ½ tsp cumin.
Fill the roasted sweet potatoes with ½ cup cottage cheese, 4 oz cooked beef, ⅓ small avocado, finely diced red onion, and cilantro.
Make the cilantro sauce by processing a handful of fresh cilantro, 2-3 garlic cloves, 1 jalapeño, the juice of 1 large lime, 2 tbsp sour cream, 1 tbsp olive oil, and 1 tbsp chili lime seasoning in a food processor. Add a pinch of salt and adjust to taste.
