Lemon Apple Hand Pies
  1. Preheat oven to 375°F.

  2. Line a baking sheet with parchment paper.

  3. In a large bowl, combine chopped apples, lemon juice, granulated sugar, cinnamon, vanilla extract and flour. Stir until apples are evenly coated.

  4. Roll out pie crusts and cut circles using a 3" biscuit cutter. Re-roll scraps if needed.

  5. Place about 1 tablespoon of apple filling onto the center of half of the circles.

  6. Brush the edges of each circle with egg wash and top with another circle of pie crust.

  7. Crimp edges with a fork to seal.

  8. Cut a few slits on the top of each hand pie to allow steam to escape during baking.

  9. Brush the top of each hand pie with egg wash and sprinkle with coarse sugar.

  10. Bake for 18-20 minutes, or until golden brown.

  11. Cool on a wire rack before serving.
