Before preparing, place a stick of butter in your freezer.
Add all dry ingredients to a large mixing bowl. Whisk together.
Add all wet ingredients to a separate small bowl. Whisk thoroughly.
Grate frozen butter into the dry ingredients.
Mix butter into the dry ingredients with a spoon.
Pour the wet ingredients into the dry ingredients and mix. It will be thick and dry.
Gently work the dough until everything is fully combined. Shape into a round disk.
You can move straight into baking, refrigerate for a few days, or freeze the disk.
Preheat oven to 400°F.
Cut the circle into 8 triangles. Place onto a parchment-lined baking sheet.
Brush with heavy whipping cream.
Sprinkle with an even mixture of espresso powder and sugar.
Bake for 14-17 minutes.
