Heat oil in heavy bottom pot to 160°C
Wash potatoes & slice into 1.5x1.5cm sticks, leaving skin on
Rinse twice and soak in ice water for 2 - 24 hours
Dry thoroughly, must be as dry as possible
Add flour, garlic, and onion to large bowl & mix well
Add dry fries to flour & coat evenly
Fry in batches at 160°C for 6 mins. Drain and allow to cool on paper towel
Continue with remaining fries
Turn up oil to 190°C and fry again for 4 - 5 mins
Salt immediately after removing from oil
