Crunchy Home Fries
  1. Heat oil in heavy bottom pot to 160°C

  2. Wash potatoes & slice into 1.5x1.5cm sticks, leaving skin on

  3. Rinse twice and soak in ice water for 2 - 24 hours

  4. Dry thoroughly, must be as dry as possible

  5. Add flour, garlic, and onion to large bowl & mix well

  6. Add dry fries to flour & coat evenly

  7. Fry in batches at 160°C for 6 mins. Drain and allow to cool on paper towel

  8. Continue with remaining fries

  9. Turn up oil to 190°C and fry again for 4 - 5 mins

  10. Salt immediately after removing from oil
