In a large saucepan
Combine first 5 ingredients (through salt) over medium-low heat; stir occasionally with a large silicone spatula until smooth.Stir in remaining ingredients until well combined.Lightly spray a 9" square baking pan with cooking spray. Lightly pack s'mores mixture into bottom of pan; press down with a sheet of parchment paper to compact.Turn out onto a cutting board; let cool completely to room temperature.Cut into 12 pieces; store bars at room temperature
