Cook bacon: Add bacon to a large, cold Dutch oven. Heat over medium and cook until bacon pieces are crispy, about 10 minutes. Remove bacon bits and place on a paper towel lined plate. Set aside.
Build up layers of chowder: To the fat in the pot, add onions and garlic. Cook, until slightly soft, about 5 minutes. Stir in flour and cook for another minute. Gradually stir in stock. Add corn, potatoes, green chiles, Cajun seasoning, and salt, and bring to a simmer. Cook until the potatoes are tender, about 20 minutes.
Finish with chicken and cream: Add chicken and cream; cook until slightly thickened, 10 to 15 minutes. Season with additional salt to taste. To serve, garnish with reserved bacon pieces and sliced green onions.
