Greek Smash Tacos
  1. Cook soy chunks with soy sauce and water until liquid is absorbed (5-10 minutes).

  2. Mix in chickpea flour, breadcrumbs, chopped parsley, and tomato sauce. Set aside.

  3. For salad: chop cucumber, tomatoes, red onion, and parsley. Mix with vinegar and salt.

  4. For tzatziki: mix vegan yogurt, herbs, lemon juice, salt, and garlic powder.

  5. Press some soy mixture onto each tortilla and fry in oil until golden brown.

  6. Assemble tacos with crispy patties, quick salad, and tzatziki.
