Zucchini Parmesan Tart
  1. Thaw puff pastry and roll it out gently.

  2. Preheat the oven to 400F.

  3. Lay puff pastry on a parchment lined baking sheet.

  4. Score the sides about an inch from the edges with a knife.

  5. Pierce the bottom of the center using a fork.

  6. In a bowl, mix together oil, garlic, salt, pepper and thyme.

  7. Brush the oil mixture on the puff pastry.

  8. Add the shaved parmesan on top of the puff pastry.

  9. Layer the zucchini slices in a single layer on top of the cheese.

  10. Brush oil mixture on top of the zucchini.

  11. Bake for 15-20 minutes until the pastry is golden brown.

  12. Top with grated Parmesan and parsley.
