Pâte Sucrée/Shortcrust
  1. Put the flour in a food processor and add the cubed butter. Pulse until you have fine crumbs. Add the sugar and pulse again to combine. Add the egg yolk and 1 tablespoon of ice-cold water and blitz until the dough comes together in a ball. Add another tablespoon of water if it isn’t coming together easily. Flatten into a disc, wrap and chill for 30 minutes in the fridge before rolling out.
