Mexican Stuffed Bell Peppers
  1. Preheat oven to 350 degrees.

  2. Clean and remove the crowns and seeds from the bell peppers.

  3. Finely chop the leftover bell pepper pieces.

  4. Season the bell peppers with salt.

  5. In a large pan over medium heat, add oil and sauté the chopped bell peppers and onion for 3 minutes.

  6. Add the chopped tomatoes and minced garlic, and cook for a couple more minutes.

  7. Add the ground beef and all the seasonings. Break down the meat and brown it.

  8. Add the rice and mix everything together. Cook for 3 minutes.

  9. Pour in the chicken broth and salsa, mix, and let it simmer.

  10. Reduce heat to low, add chopped cilantro, cover and cook for 20 minutes.

  11. Place the bell peppers in the oven and bake for 20 minutes.

  12. Stuff the bell peppers with the beef mixture and top with cheese.

  13. Bake the stuffed bell peppers for 10 more minutes or until the cheese has melted.
