Cacio e Pepper Pasta - Miami Pasta

Heat a nonstick skillet to medium high

Add freshly ground black pepper and toast

Add a quarter cup of pasta water to the toasted pepper

In a bowl and a quarter cup of the pasta water to the cheese and mix well. Add a little more pasta water to make a smooth creamy cheese sauce.

Finish cooking pasta and add it to the pepper pan. Add a little more pasta, water and mix well.

Add the cooked pasta to the cheese bowl and turn to mix well

Top with some more freshly grated cheese
