Spicy Xo Mushroom Fried Rice
  1. Heat a splash of oil in a pan

  2. Add ½ diced onion and stir until translucent

  3. Add 1 cup finely-chopped mushrooms (including stems) and cook until browned

  4. Add 3-4 cloves finely chopped garlic, grated ginger, 2-3 finely chopped red chillies (or diced red pepper), and 2-3 tsp gochugaru/chilli flakes/paprika

  5. Mix well to combine

  6. Add 1 cup cooked rice and reduce heat

  7. Add 1 tbsp soy sauce, 1.5 tbsp dark soy sauce, 1.5 tbsp rice vinegar, 1 tbsp toasted sesame oil, and 1-2 tbsp chilli oil

  8. Give it a good mix and taste to adjust flavours according to preference

  9. Serve hot and enjoy
