Coconut Brown Butter Cookies
  1. In a medium saucepan, melt butter over medium heat until it turns golden brown and smells nutty.

  2. Once browned, pour the butter into a measuring cup and add 2 tablespoons of water to bring it back to 1 cup. Chill in the fridge until solidified.

  3. Preheat the oven to 350 degrees and line baking sheets with parchment paper.

  4. In a large mixing bowl, combine the chilled browned butter and both sugars, beating until fluffy.

  5. Add the egg and vanilla, mixing until combined.

  6. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the butter mixture, mixing until combined.

  7. Fold in the coconut chips in two parts.

  8. Scoop dough into balls and arrange on the baking sheet, flattening slightly.

  9. Bake for 10-16 minutes depending on the size of the cookies, until deeply golden.

  10. Cool on the baking sheet for 1-2 minutes before transferring to a cooling rack.
