Preheat oven to 450 F.
Cook chicken thighs in a cast iron skillet with olive oil until browned and cooked through. Shred the chicken and set aside.
If using store-bought simmer sauce, add shredded chicken and butter to the skillet. Adjust seasoning as needed.
If making the sauce from scratch, sauté onions, garlic, and ginger in butter. Add spices and continue cooking. Add lemon juice, marinara sauce, and cream. Stir well and add shredded chicken. Cook until sauce thickens.
Add pimento cheese and bake in the oven until cheese is melted.
Serve with cilantro and naan or pita bread.
