Crispy Baked Potato Halves
  1. Preheat oven to 425°. Line half baking sheet with parchment paper.

  2. Scrub potatoes to clean them. Cut lengthwise.

  3. Brush both sides of potato with olive oil. Sprinkle well with kosher salt and black pepper.

  4. On parchment paper lay down two pats of butter per potato. Sprinkle area where potato will lie with shredded Parmesan cheese.

  5. Press down each potato half onto butter and Parmesan.

  6. Bake in preheated oven for 30 to 40 minutes until potatoes are tender and golden crispy brown.

  7. Remove from oven, slice lengthwise, and squeeze potato to loosen.

  8. Top with favorite toppings such as butter, sour cream, grated cheese, scallions, chives, cooked bacon, kosher salt and pepper.
