Preheat your oven to 400 degrees.
On a baking sheet lined with parchment paper, sprinkle a small amount of cheddar cheese.
Layer on some sliced white onions and pickles.
Add a portion of leftover pulled pork and drizzle with barbecue sauce.
Cut the puff pastry into four equal pieces and place each piece over the pulled pork mixture.
Use a fork to press down the edges of the pastry to seal them.
Brush the tops with a little egg wash.
Bake in the oven for about 15 minutes, or until golden brown.
