No-bake Date Caramel Cookie Dough Slices
  1. Line a quarter baking sheet with parchment paper.

  2. In a medium bowl, mix together the peanut butter, maple, melted & cooled coconut oil, and vanilla extract until smooth.

  3. Add in the almond flour and pinch salt - and mix to incorporate.

  4. Fold in mini chocolate chips.

  5. Transfer the cookie dough to the prepared baking sheet and pack it down using a spatula and your hands into a rectangle-ish shape about ¼-½ inch thick.

  6. Pit the dates, soak in hot water for a few minutes to soften.

  7. Drain, transfer to a blender and add maple, peanut butter, vanilla.

  8. Add non-dairy milk to thin.

  9. Spread the date caramel onto the cookie dough!

  10. Melt the chocolate chips and coconut oil together in your microwave in 15 second increments, stirring between intervals until completely glossy.

  11. Pour melted chocolate on top of the date caramel and smooth gently until even, leaving about ¼ inch around the edges.

  12. Add flaky salt on top and transfer to freezer to set for 1 hour.

  13. Cut into bars, enjoy!
