Preheat your oven to 425F.
Lay 6 pieces of bacon on a parchment paper lined baking sheet.
In a small mixing bowl, whisk together 1 tbsp of finely sliced sage & 2 tbsp of maple syrup.
Using a pastry brush, coat the bacon in the maple mixture.
Bake for about 15 minutes, or until the bacon is golden and crispy.
Pat the bacon dry, dice, and set aside.
Pan fry 5 cups of shaved brussels sprouts in 2 tablespoons of olive oil and a sprinkle of salt until golden brown—about 10-15 minutes.
Add the brussels sprouts to a bowl or serving plate, along with ½ cup of diced apple, 1 tbsp of finely diced shallot, ½ cup of chopped pecans, the bacon, and ½ cup of sliced sharp cheddar cheese.
Whisk together the apple cider dressing—2 tbsp of apple cider, 1 tbsp of apple cider vinegar, the juice of ½ a lemon, ½ tsp of dijon mustard, 2 tbsp of oil, and a pinch of salt.
Mix everything together and enjoy!
