Mix chicken with garlic, paprika, salt, and pepper. Form 8 balls.
Add tortilla to skillet, sprinkle cheese, place chicken ball on top.
Flatten chicken with spatula and cook cheese-side down 2 minutes.
Cook chicken side 3–4 minutes until golden.
Toss cabbage, pickles, and brine.
Blend cottage cheese, ranch seasoning, and lemon juice.
Add slaw, chicken, and drizzle. Serve hot.
