Potato and onion pie: when it's lean season in the pantry!
The principle is that of potato rösti. The practice is that I also had to consume onions.
🔻INGREDIENTS🔻
5 medium-large potatoes
2 large onions (also 3)
salt
Pepper
Extra virgin olive oil
Parmesan
🔻PROCEDURE🔻
Grate the potatoes with a large-holed grater.
Add a teaspoon of salt and let rest covered for 30 minutes.
Remove all excess vegetable water and squeeze well, once you have placed the potatoes in a cloth.
Now season with two pinches of salt, a grind of pepper, 2 tablespoons of oil and a handful of parmesan.
Place on a baking tray lined with baking paper, creating a sufficiently thin layer.
Arrange onion slices cut not too thinly on top.
A drizzle of oil and a pinch of salt and off you go in a preheated static oven at 200 degrees for 25/30 minutes.
Add plenty of Parmesan on the surface and bake at 200 degrees but fan-assisted for another 20 minutes.
