Homemade Hummus
  1. Soak 1 pound of chickpeas (garbanzo beans) overnight with a teaspoon of baking soda.

  2. Wash and boil the chickpeas until they form a high foamy peak.

  3. Strain the first boil to remove unwanted particles.

  4. Continue boiling the chickpeas until they are overcooked and resemble mashed potatoes.

  5. Cool the chickpeas and store them in the refrigerator or freezer.

  6. If freezing for later use, reduce the cooking time, wash the beans, remove excess liquid, and store in a Ziploc bag.

  7. When ready to make hummus, use a food processor or blender.

  8. Add 5 cups of cooked chickpeas, 1 tablespoon of salt, 2 teaspoons of citric acid or ¼ cup of lemon juice, 3 cloves of garlic, ½ cup of tahini, ½ cup of ice, and 2 tablespoons of olive oil.

  9. Blend until smooth and creamy.
