Copycat Kokkari Maroulosalata (lettuce Salad)
  1. Chop the romaine, radicchio, dill and green onions, and set aside

  2. In a blender add the olive oil, most of the feta cheese (save some to crumble on top), garlic, lemon, pepper and water

  3. Blend until smooth and set aside

  4. In a small pan on the stove over medium heat, add the pine nuts and toast until fragrant and golden for 2-3 minutes, watching so they don't burn

  5. Remove from heat

  6. Add all of the salad ingredients to a large bowl

  7. Pour dressing on top and toss to coat well

  8. Garnish with more dill, pine nuts and crumbled feta on top

  9. Enjoy immediately
