Chop the romaine, radicchio, dill and green onions, and set aside
In a blender add the olive oil, most of the feta cheese (save some to crumble on top), garlic, lemon, pepper and water
Blend until smooth and set aside
In a small pan on the stove over medium heat, add the pine nuts and toast until fragrant and golden for 2-3 minutes, watching so they don't burn
Remove from heat
Add all of the salad ingredients to a large bowl
Pour dressing on top and toss to coat well
Garnish with more dill, pine nuts and crumbled feta on top
Enjoy immediately
