Chicken Panang Curry Rice Paper Rolls
  1. Make panang sauce by mixing together all ingredients.

  2. Place chicken in a bowl and pour over just enough panang sauce to coat the chicken. Set aside remaining sauce.

  3. Arrange chicken in a single layer in air fryer. Spray with oil and cook for 15 mins (shaking half way) at 180C or until the chicken is crispy.

  4. Meanwhile, prepare noodles according to package directions.

  5. Once the chicken is cooked, prepare rice paper wrapper according to package directions.

  6. Place wrapper on a flat surface and top with a small portion of noodles, carrot, Thai basil, chicken and ½ a tbsp of sauce.

  7. Roll up and repeat for remaining ingredients.

  8. Serve with remaining dipping sauce.
