Preheat your oven to 425°F (220°C).
Peel and cut the potatoes into small chunks.
Bring a pot of salted water to a boil and add the potato chunks.
Boil the potatoes for 8 minutes, then drain them thoroughly.
Place the drained potatoes in a large bowl.
Add oil, breadcrumbs, salt, pepper, and paprika to the potatoes. Mix well to ensure each piece is evenly coated.
Spread the potatoes out on a baking sheet lined with parchment paper or lightly greased.
Bake in the preheated oven for 25-30 minutes or until the potatoes are golden and crispy. The broil for a few minutes.
Remove from the oven and serve warm.
