Preheat oven to 350°F and line a baking sheet with parchment paper.
Heat and mix diced apples with maple syrup, cinnamon, lemon juice, lemon zest (if desired), and salt for 6-8 min until soft.
Mix protein powder, honey, oat flour, oats, and greek yogurt. It’ll be thick and wet.
Fold in the apples. Scoop into 10 balls and place on the baking sheet.
Bake for 12 minutes.
