Spinach enchiladas
  1. Melt butter. Saute garlic and green onions.

  2. Add spinach.

  3. Add sour cream and ricotta.

  4. Add mozzarella. Mix well.

  5. Spoon into tortilla shells. Top with enchilada sauce.

  6. Bake at 375 until hot about 20 minutes.
