Preheat the oven to 220°C
Lay the pastry flat on a parchment/baking sheet lined 10-12 inch baking dish
Pile the cheese in the centre
Mix the thyme and garlic together then sprinkle over the cheese, nestle in the figs
Drizzle honey on cheese and figs
Fold the pastry partially over the cheese
Brush the pastry with beaten egg
Bake for 25-30 minutes or until the pastry is golden brown and the cheese bubbling and molten hot
